First, Some History
Pizza may have originated in Italy, but pepperoni is actually American-Italian inspired, even though we don’t know exactly where it came from or who was the first to make it. John Mariani, a food writer and historian, says that the first mention of pepperoni was in 1919 when pizzerias and butcher shops were beginning to pop up all over the United States.
In Italian, the word “peperoni” actually means large peppers, like bell pepper. How the American word pepperoni came to mean the semi-sausage, semi-salami food, no one really knows. And there isn’t a type of salami in Italy that is called pepperoni. Possibly the closest thing to pepperoni in Italy is soppressata, which is a cured dry sausage. But really, do we care? It tastes amazing and adds a level of spice to our pizza that we just can’t live without.
How is it Made and What’s In It?
Pepperoni is a type of sausage made with minced beef and pork as well as spices such as red chilies, black pepper, salt, paprika, garlic, and fennel seed. To make it, the meat is finely minced and the spices are mixed into the meat. The mixture is then stuffed into casings and hung to dry. After several weeks, the pepperoni is sliced and ready to be placed (directly into your mouth) onto a pizza.
